Easter Nests
Easter Nests is an moderately easy dinner. Made with 7 oz. bag sweetened coconut, 3 tbsp. sugar, 2/3 c. semi-sweet chocolate morsels, 2 egg whites and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Stir together sugar and coconut; set aside.
Microwave chocolate in a 1-qt. bowl on High for 1 1/2 minutes, stirring twice; cool.
Whisk together egg whites, vanilla and salt.
Stir in melted chocolate and add this to coconut mixture, stirring well.
Drop by heaping tablespoons 2 inches apart onto a lightly greased, parchment paper lined baking sheet.
Make an indentation in the middle of each mound with thumb to form a nest.
Bake at 350 degrees for 14 minutes or until bottoms are crisp.
Centers will be soft.
Press 3 jelly beans into the center of each nest and cool for 10 minutes on baking sheet.
Remove to wire racks to cool completely.
Store in air-tight container.
