Earthquake Cake
Earthquake Cake is an moderately easy dinner. Made with 1 can coconut (1 1/3 c.), 1 c. chopped pecans, 1 pkg. german chocolate cake mix, 1 (8 oz.) pkg. cream cheese and 1 stick margarine, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Mix coconut and pecans; spread into well-greased and floured 8 x 14-inch pan.
Mix cake mix as directed on package.
Pour over pecan and coconut mixture at room temperature.
Mix cream cheese and stick of margarine in blender.
Add powdered sugar and blend until smooth.
Drizzle over cake as a topping.
Bake 45 minutes at 325° to 330°.
Test with toothpick.
