Dr. Byrd Cake
Dr. Byrd Cake is an moderately easy dinner. Made with 3 c. all-purpose flour, 1 tsp. baking soda, 1 tsp. cinnamon, 1 tsp. salt and 2 c. sugar, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Sift dry ingredients into large bowl.
Make a well in center and break eggs into it.
Add oil, vanilla, bananas and last the pineapple with juice.
Stir, do not beat, until well blended (under mixing will ruin cake).
Pour batter into well greased (9 or 10-inch) tube pan.
Bake at 350Β° for one hour and 20 minutes.
Cake will crack on top.
Set pan on rack to cool.
Run knife blade around edges of pan and turn out to cool.
