Dirty Rice
Dirty Rice is an moderately easy dinner. Made with 4 c. cooked rice (1 1/2 c. uncooked), 1 lb. pkg. parks hot sausage, 1 pt. chicken livers, 1/2 c. chopped onion and 1/2 c. chopped celery, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cook rice; set aside.
In large skillet, brown sausage. Remove sausage and pour off half accumulated grease.
Add butter, onions, celery, garlic and chives and saute until soft.
In a blender, blend chicken livers and blend until liquified.
Pour into skillet; cook until done (will change color).
Mix sausage and livers with rice.
Mix thoroughly.
Add salt and hot sauce to taste.
