Diet Pineapple Cheesecake
Diet Pineapple Cheesecake is an moderately easy dinner. Made with 20 oz. can crushed pineapple, packed in its own juice, 20 packets unflavored gelatin, 1/2 c. hot water, 1 1/3 c. skim milk powder (no water added) and 2 packets sugar substitute equal to 4 tsp. sugar, this recipe delivers authentic, satisfying flavors. Place drained pineapple in blender with half of its juice. Add gelatin and hot water; blend 2 minutes.
Add dry milk and remainder of juice, sugar substitute, vanilla, butter flavoring and lemon juice.
Blend for 3 minutes.
Pour into 10-inch pan, sprinkle lightly with cinnamon and allow to set 1 hour before serving.
