Diet Lemon Cheese Cake
Diet Lemon Cheese Cake is an moderately easy dinner. Made with 2 graham crackers, crushed, 1 (4 oz.) pkg. lemon jello flavor (sugar-free), 2/3 c. boiling water, 1 c. light 'n lively low-fat cottage cheese and 1 (8 oz.) pkg. light philadelphia cream cheese, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Spray an 8 or 9-inch pie plate with nonstick cooking spray. Sprinkle crumbs on bottom and sides.
Dissolve gelatin in boiling water; cool.
Into blender put gelatin, cottage cheese and softened cream cheese; blend until smooth.
Pour into large bowl. Gently stir in Cool Whip.
Pour into crumbs.
Chill 4 hours, until set.
Top with cherry filling, if wanted.
