Diabetic Pecan Pie

Made with 1 c. apple juice concentrate, thawed, 2 tsp. arrowroot or cornstarch, 3 eggs, lightly beaten, 1 heaping c. whole or broken pecans and 1 tbsp. butter or margarine, melted, this recipe delivers authentic, satisfying flavors. Sprinkle arrowroot over concentrate apple juice in a small saucepan.
Over low heat, stir until clear and thickened.
Cool this.
Beat in eggs, butter, vanilla, lemon juice and salt.
Mix well.
Stir in pecans and pour into a partially baked pie crust. Bake in preheated 400° oven for 10 minutes.
Lower heat to 300° and bake 20 to 30 minutes or until set.
