Deli-in-a-Skillet
Deli-In-A-Skillet is an moderately easy dinner. Made with 1/2 lb. corned beef, 1 (14 oz.) can sauerkraut, 1 1/2 c. water, 1 1/2 c. minute rice and 1/2 c. thousand island salad dressing, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix corned beef, sauerkraut and water in a large skillet. Bring to a full boil.
Stir in rice.
Pour dressing over rice and top with cheese.
Cover.
Remove from heat.
Let stand for 5 minutes.
Makes 4 servings.
Kielbasa, knockwurst or similar meat may be substituted for the corned beef.
