David's Bumpy Pudding
David'S Bumpy Pudding is an moderately easy dinner. Made with 1/2 c. large tapioca, 1 1/2 c. water, 2 eggs, 1/2 c. sugar and 1 qt. milk, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Soak tapioca in water overnight or a couple of hours.
In saucepan beat eggs.
Add sugar and continue beating until blended. Add milk.
Stir and add tapioca and water.
Cook until it thickens, stirring constantly. Boil 3 to 5 minutes.
Remove from heat.
Add vanilla and almond or 1/2 teaspoon almond and 1/2 teaspoon lemon extract.
Cool and serve.
Serves 6 people or 2 servings for David.
