Date Nut Ritz Cracker Cookies is an easy dessert you can prepare in just 30 minutes. Made with c. chopped dates (easier to use one box chopped dates), eagle brand (sunshine at aldi's is same, and cheaper) and c. chopped pecans, this recipe delivers authentic, satisfying flavors. Put in double boiler and cook slowly, it burns over burner. Lay Ritz crackers (Aldi's cheaper), salty side down, on ungreased cookie sheet with sides to it, they'll slip off.
Place 1 teaspoon date mixture on each cracker.
Bake in slow oven at 325Β° for 5 minutes only; set out to cool.
