Date Nut Pudding
Date Nut Pudding is an moderately easy dinner. Made with 1/2 lb. chopped dried dates, 1 tsp. soda, 1 c. boiling water, 2 tbsp. shortening and 2 eggs, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Add soda to dates.
Pour boiling water over mixture.
Beat eggs; add 1 cup sugar and melted shortening.
Combine this mixture with hot dates.
Add flour, salt and baking powder.
Fold chopped nuts into mixture.
Pour in greased cake pan.
Bake 40 to 45 minutes at 325Β°.
Cut in 1-inch squares.
Put layer in bowl, then top with Cool Whip, then more squares, etc.
