Curried Rice
Curried Rice is an moderately easy dinner. Made with 2 1/2 c. water, 1/2 tsp. salt, 1 c. uncooked long grain rice, 1/2 c. boiling water and 1/3 c. raisins, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Combine 2 1/2 cups water and salt in a medium saucepan.
Bring to a boil and add rice.
Cover, reduce heat and simmer 20 minutes or until rice is tender and water absorbed.
Pour 1/2 cup boiling water over raisins.
Let stand 1 minute.
Drain raisins; set aside.
Combine butter and curry powder, stirring to blend.
Stir curry mixture, raisins and walnuts into cooked rice.
Yield: 4 servings.
