Cucumber Pickle Relish
Cucumber Pickle Relish is an moderately easy dinner. Made with 7 c. coarsely grated cucumbers with skins on (any size except real large ones), 1 c. chopped green pepper, 1 c. chopped onion, 1 tbsp. salt and 1 c. brown vinegar, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Mix by hand and put in jars.
Makes 2 quarts.
Cover with lids (not sealed) and tighten and then loosen a little.
Pickles will work a little so it needs a little "working" space!
Refrigerate. Will keep up to a year.
