Crunchy Carrot Balls
Crunchy Carrot Balls is an moderately easy dinner. Made with 1 (3 oz.) pkg. cream cheese, softened, 1/2 c. shredded cheddar cheese, 1 tsp. honey, 1 c. finely shredded carrot and 1/2 to 1/3 c. grape-nuts, this recipe delivers authentic, satisfying flavors. In medium size mixing bowl, beat cream cheese, Cheddar cheese and honey together until blended.
Stir in shredded carrots. Cover and chill 30 minutes.
Shape into fourteen one-inch balls. Cover and chill.
Just before serving, roll in mixture of cereal and parsley, pressing into cheese to coat.
Makes 14 balls.
