Crispy Zucchini Or Eggplant is an moderately easy dinner. Made with 1/2 c. mayonnaise or salad dressing, 1 tbsp. minced onion, 1/4 tsp. salt, 1/3 c. fine dried bread crumbs and 1/3 c. grated parmesan cheese, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In a small bowl, combine the first 3 ingredients (or can use 1/2 cup Hidden Valley Ranch dressing in place of the 3 ingredients).
On a waxed paper, combine next 3 ingredients.
Brush both sides of the sliced zucchini with the mayonnaise mixture and coat using crumb mixture.
Place in shallow pan or baking sheet. Bake at 425Β° for 15 to 17 minutes or until browned.
