Creamy Yellow Squash Casserole
Creamy Yellow Squash Casserole is an moderately easy dinner. Made with 2 c. sliced yellow squash, 1 can mushroom soup, 1 c. sour cream (fat-free), 4 oz. pimentos, drained and sliced or finely cut green peppers and 1 c. sliced water chestnuts, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Cook and drain squash.
Add soup, sour cream, peppers (or) pimentos, water chestnuts and onions.
Set aside 1/3 of margarine. Melt the other 2/3 margarine and mix with stuffing mix.
Use half stuffing mix to line bottom of 2-quart baking dish, then cover with squash mixture.
Top with rest of stuffing mix and dot with the rest of the margarine that was set aside.
Bake at 350Β° for 30 minutes.
