Creamy Stuffed Baked Potatoes is an moderately easy dinner. Made with 10 to 12 idaho baking potatoes, 1 1/2 c. sour cream, 1 1/2 sticks butter, chives to taste and parslied garlic salt to taste, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Wrap potatoes in foil and bake at 400° for 1 hour.
Cut potatoes in half, lengthwise, and scoop out potato.
Combine scooped potato with butter, sour cream, chives and parslied garlic salt. Mash mixture with a fork until thoroughly mixed but still lumpy. Fill potato jackets with mixture.
Top with paprika and cheese. Place potatoes on a cookie sheet and bake 15 minutes in a 350° oven. Serves 20 people.
