Creamy Rice Pudding
Creamy Rice Pudding is an moderately easy dinner. Made with 1 1/2 c. cooked rice, 2 c. milk, divided, 1/3 c. sugar (a little bit less is o.k.), 1/4 tsp. salt and 1 egg, beaten, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Combine rice, 1 1/2 cups of the milk, sugar and salt in a heavy saucepan.
Cook over medium heat, stirring occasionally, until thick and creamy, 15 to 20 minutes.
Blend remaining 1/2 cup of milk and egg.
Stir into rice mixture.
Add raisins.
Cook 2 minutes longer, stirring occasionally.
Add butter and vanilla. Sprinkle with nutmeg or cinnamon, if desired.
