Creamy Potato Salad
Creamy Potato Salad is an moderately easy dinner. Made with 6 medium potatoes, peeled and cubed (red or white), 1/4 c. chopped onion (green or yellow), 1 (2 oz.) jar diced pimento, drained (optional), 1/2 c. mayonnaise or miracle whip and 2 tbsp. prepared yellow mustard, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Boil potatoes 10 to 15 minutes or until tender; drain and let cool.
Combine potatoes, onions and pimento in a large bowl. Combine mayonnaise and next 7 ingredients in a small bowl; stir well.
Add to potato mixture, tossing gently to coat.
Cover and chill.
