Cream of Potato Soup
Cream Of Potato Soup is an moderately easy dinner. Made with 6 c. potatoes (about 5 large), 1/2 c. sliced carrots, 6 slices bacon, 1 c. chopped onion and 1/2 c. chopped celery, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cook potatoes and carrots in boiling water until tender. Drain.
Cook bacon until crisp.
Drain and crumble.
Saute and celery in 2 tablespoons bacon fat.
Combine cooked vegetables, bacon, salt, pepper, milk and cream.
Simmer for 30 minutes.
(Do not boil.)
Garnish with shredded Cheddar cheese and parsley. Yields 2 quarts.
