Cream of Broccoli Soup - with No Cream
Cream Of Broccoli Soup - With No Cream is an moderately easy dinner. Made with 1 medium onion, chopped, 1 clove garlic, crushed, 1 tbsp. sunflower oil or other vegetable oil, 1 bay leaf and 1 lb. green broccoli, chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Saute the onion and garlic in the oil with bay leaf until soft or in saucepan sprayed with Pam, 3 to 4 minutes.
Add broccoli, potato and stock.
Simmer gently, covered, 10 minutes, when the broccoli should be tender but still bright green.
Remove bay leaf and let cool a little.
PurΓ©e in a blender (not totally smooth). Season to taste.
Add lemon juice.
May need reheating in clean pan before serving.
Add a dollop of yogurt just before serving. Serves 4.
