Crawfish Gumbo
Crawfish Gumbo is an moderately easy dinner. Made with 1/2 c. shortening, 1/2 c. flour, 2 gal. live crawfish, salt and chief-magic kitchen seasoning to taste and 2 medium onions, chopped fine, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Heat shortening.
Add flour and make roux, stirring until brown.
Add onions, celery and bell pepper.
Stir until vegetables are soft or wilted.
Add fat from heads of crawfish; stir until fat comes to top.
Add water and seasonings; simmer 20 to 30 minutes.
Chopped parsley and onion tops may be added.
Serve with rice.
