Crawfish Fettuccini
Crawfish Fettuccini is an impressive dinner. Made with 3 cloves minced garlic, 3 celery stems, chopped, 3 lb. crawfish tails (no fat), 1 stick butter and 1/4 c. flour, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Saute onions, celery and bell peppers in margarine and butter until tender (do not brown).
Add 1/4 cup flour and blend.
Add parsley and crawfish all at once.
Cook 15 minutes.
Add half and half and 1 pound grated Velveeta.
Add chow chow and garlic. Season to taste.
Cook on low heat 30 minutes, stirring occasionally.
Add cooked noodles.
Pour in greased casserole. Sprinkle with Parmesan and jalapeño cheeses.
Heat at 350° until cheese is melted.
