Cranbrosia
Cranbrosia is an moderately easy dinner you can prepare in about 1 hour 28 minutes. Made with c. fresh cranberries, coarsely ground, c. sugar, (11 oz.) can mandarin oranges, well drained, (8 oz.) can pineapple tidbits, well drained and c. coconut, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Combine cranberries and sugar; mix well to dissolve sugar. Drain and reserve liquid from oranges and pineapple.
Add fruit and coconut to cranberries.
Sprinkle gelatin over 3/4 cup combined juices to soften.
Heat over medium temperature to dissolve gelatin.
Add to fruit.
Fold in sour cream.
Whip the cream and fold into fruit mixture.
Place in 2-quart mold.
Chill overnight.
