Cranberry Salad
Cranberry Salad is an moderately easy salad you can prepare in about 1 hour 40 minutes. Made with c. cranberries, c. sugar, grated orange rind, c. water and c. chopped nuts, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Grind cranberries.
If frozen, they grind easier.
(Measure after ground.)
Put in heavy saucepan with the following: sugar, orange rind and water.
Bring to boil and pour over Jell-O.
Add unflavored Knox gelatin, softened in 1/4 cup cold water.
When cool, add 1 cup chopped celery.
Stir once again and add 3/4 cup chopped nuts just before it sets.
Best if made 24 hours before serving.
Pour into a nice serving dish.
