Cranberry Pudding
Cranberry Pudding is an moderately easy dinner. Made with 1 1/3 c. flour, 1/2 c. molasses (mild), 2 c. whole raw cranberries, 1/3 c. hot water and 1/4 c. chopped nuts, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine flour, molasses, cranberries and nuts in a bowl.
Add soda to the hot water and pour into bowl; mix lightly.
Pour into greased 1-quart mold.
Cover tightly with foil.
Steam over boiling water for 1 1/2 hours.
Serve warm with Vanilla sauce. Serves 6.
Double recipe for larger mold and add another hour steaming.
(Can also be baked in flat pan.)
