Cranberry Mold
Cranberry Mold is an moderately easy dinner. Made with 1 lb. fresh cranberries, 1 c. sugar, 1 c. finely chopped celery, 1 c. finely chopped, peeled and cored apples and 1 c. finely chopped pecans or walnuts, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Chop or blend the cranberries, one cup at a time.
Add the sugar; let set for 15 minutes.
Add the celery, apples and pecans or walnuts; set aside.
Sprinkle the gelatin over the orange juice in a small saucepan.
Let stand 1 minute, then heat over low heat, stirring, until gelatin is dissolved.
Stir into cranberry mixture, then place all into a lightly oiled 1-quart mold. Refrigerate for 6 to 8 hours, until set.
Garnish and serve with mayonnaise, or eat as is.
