Cranberry Ice
Cranberry Ice is an moderately easy dinner you can prepare in about 1 hour 46 minutes. Made with . fresh cranberries, c. sugar, c. cold water, lemons and . grated orange peel, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Wash cranberries thoroughly.
Cut lemons in half; squeeze the juice from them into a bowl.
Grate peel from an orange into bowl. Set aside.
In a saucepan, boil together the cranberries, sugar and 2 cups of the cold water until the berries pop.
Cool.
Blend in blender until smooth.
Add the lemon juice/orange peel and the remaining 2 cups of water.
Blend again until thoroughly mixed. Pour mixture into a large container and freeze.
Remove from freezer about 1 hour before serving.
A great drink from Cranberry Country.
Yield: cups.
