Cranberry Holiday Salad
Cranberry Holiday Salad is an moderately easy dinner. Made with 1 pkg. strawberry jell-o, 1 c. hot water, 1 (9 oz.) can crushed pineapple, 1/2 tsp. lemon peel, grated and 2 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Dissolve Jell-O in hot water.
Drain pineapple, reserving syrup.
Add pineapple syrup, lemon peel, lemon juice and salt to gelatin.
Chill until partially set.
Fold in pineapple, celery, cranberry sauce and nuts.
Pour into 5 1/2 cup mold.
Chill until firm.
Unmold on lettuce.
Serves 8.
