Cranberry Delight Salad
Cranberry Delight Salad is an moderately easy dinner. Made with 1 (20 oz.) can crushed pineapple, juice drained and reserved, 1 c. water, 1 can whole cranberry sauce, 3 tbsp. lemon juice or 3 tbsp. orange juice concentrate and 1 tsp. grated lemon or orange peel, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Combine pineapple juice and water in a 2-quart saucepan; heat to boiling.
Remove from heat; add gelatin and stir until completely dissolved.
Stir in cranberry sauce, lemon juice, lemon peel and nutmeg.
Chill until mixture thickens slightly.
Add sour cream; stir until thoroughly combined.
Fold in pineapple and nuts.
Pour into an 8-cup mold or serving dish.
Chill until firm. Keeps well.
Serves 12 to 15.
