Cranberry Bread
Cranberry Bread is an impressive dinner. Made with grated rind of 1 lemon, grated rind of 1 orange, 3 tbsp. lemon juice, 2 tbsp. shortening, melted and orange juice, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix together first 4 ingredients; add orange juice to equal 3/4 cup liquid.
Sift dry ingredients together.
Add orange juice mixture, egg, vanilla and almond extract; stir only until moist. Fold in nuts and cranberries.
Spoon batter into a loaf pan lined with greased paper.
Bake at 350Β° for 1 hour to 1 hour and 10 minutes.
Cool, cut into thin slices.
Can be made ahead and wrapped in foil, then put in freezer.
