Crackling Cornbread
Crackling Cornbread is an easy dinner. Made with 2 1/2 c. self-rising cornmeal, 1/2 c. self-rising flour, 3 to 4 eggs, 2 c. buttermilk (watch texture) and 2 c. cracklings, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Stir together dry ingredients and cracklings.
Add milk and eggs.
Put into a hot skillet (iron) which has been prepared with oil and a dusting of cornmeal to keep from sticking.
Bake at 350Β° until done, approximately 30 minutes to brown correctly.
