Crab-Stuffed Manicotti
Crab-Stuffed Manicotti is an impressive dinner. Made with 8 oz. pkg. manicotti, 16 oz. ricotta cheese, 1/2 c. grated parmesan cheese, 1 egg, beaten and 6 1/2 oz. can crabmeat, rinsed and drained, this recipe delivers authentic, satisfying flavors. Prepare manicotti per package directions; drain.
In a medium bowl, combine Ricotta, 1/2 cup Parmesan cheese and egg.
Mix well. Stir in crabmeat, pimiento, 1 tablespoon of parsley, 1/2 teaspoon of salt and 1/2 teaspoon of pepper.
Fill manicotti with cheese mixture.
Arrange in a 12 x 8-inch baking dish.
