Crab Gumbo
Crab Gumbo is an moderately easy dinner. Made with 1/2 c. onions, chopped, 2 tbsp. butter or margarine, 1 16-oz can tomatoes, cut up, 1 8-oz can tomato sauce and 1 13-3/4 oz can chicken broth, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In 3 quart saucepan cook onion in butter or margarine till tender but not brown.
Add tomatoes, tomato sauce, chicken broth, sugar, pepper, and bay leaf.
Bring to boiling; reduce heat and simmer, uncovered, about 30 minutes.
Remove bay leaf.
Add okra, and crab or shrimp; heat through.
Serve gumbo over hot cooked rice in soup plates.
