Spread sauerkraut over the bottom of a Dutch oven.

Sprinkle seeds on top.

Salt and pepper the meat to taste and lay on top of the kraut.

Put on cover and bake at 325° at least 3 1/2 hours (remove the cover the last 1/2 hour).

Serve with cold applesauce and jalapeño corn bread
