Country Cake
Country Cake is an moderately easy dinner. Made with 2 c. sugar, 1 1/2 c. oil, 3 eggs, 2 c. shredded apples, peeled and 3 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In large bowl, beat sugar, oil and eggs at medium speed until smooth, about 2 minutes.
Blend in apples.
Combine dry ingredients.
Add gradually to mixture.
Stir in prunes and nuts. Spoon into a greased 10-inch tube pan.
Bake at 325Β° for 1 hour and 20 minutes.
Check with toothpick.
Cool about 10 minutes. Invert pan while cooling.
Use funnel or wire rack.
Lightly dust cake with confectioners sugar.
