Country Breakfast
Country Breakfast is an moderately easy dinner. Made with 4 c. cubed, cooked potatoes, 1/2 c. green pepper, chopped, 2 tbsp. onion, chopped, 1/3 c. margarine and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook potatoes, green pepper and onion in margarine until lightly browned.
Season to taste with salt and pepper.
Break the eggs over potato mixture. Cover and cook until eggs are done. Sprinkle with cheese. Cover until cheese is melted.
