Cottage Potatoes
Cottage Potatoes is an moderately easy dinner. Made with 10 potatoes, 1 c. onions, 1 c. green pepper, 1/2 lb. velveeta cheese and 1 small jar pimientos, cubed, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Boil potatoes in jackets.
Peel and cube.
Add onions, green pepper, Velveeta cheese (cubed), pimientos, salt and pepper to taste.
Mix together.
Pour over top enough milk to moisten, about 1/2 cup.
Marinate overnight.
Top with crushed corn flakes. Drizzle 1 stick of melted oleo over top.
Bake 40 to 50 minutes at 350Β°.
