Cottage Potatoes
Cottage Potatoes is an moderately easy dinner. Made with 5 large potatoes, cooked and diced, 1 c. cheddar cheese, grated, 1 medium onion, chopped, 1/2 c. parsley, chopped and 1/2 c. fresh bread crumbs, this recipe delivers authentic, satisfying flavors. Preheat oven to 400Β°.
Grease 2-quart casserole.
In bowl, combine potatoes, cheese, onion, parsley and bread crumbs; mix well.
Turn into casserole.
Blend salt, pepper, butter or margarine and milk.
Pour over potato mixture.
Sprinkle with cornflakes.
Bake in preheated oven for 30 minutes.
Serves 6.
