Cottage Cheese Loaf
Cottage Cheese Loaf is an moderately easy dinner. Made with 2 lbs. cottage cheese, 1 (8 oz.) pkg. cream cheese, 1 tsp. salt, 1/4 c. sugar and 1 envelope knox gelatin soaked in 1/4 c. cold water, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Using a fork, cream together cheeses, salt and sugar. Dissolve soaked gelatin over hot water.
Stir quickly into the cheeses.
Add chopped nuts, diced pepper and chopped olives, reserving about six for garnish.
Have a five cup ring mold well oiled with Wesson Oil.
Arrange garnish (olives and pecans or pepper) in the bottom of the mold.
Press cheese mixture into mold.
Refrigerate, unmold and serve with "Cousin Melvina's Dressing".
