Corny Onion Shortcake
Corny Onion Shortcake is an moderately easy dinner. Made with 1/4 c. margarine, 1 large sweet onion, finely chopped, 1 1/2 c. corn muffin mix, 1 egg and 1/3 c. milk, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

In skillet, melt butter over medium heat.
Saute onion until tender. Remove from heat and set aside.
In bowl, combine muffin mix, egg, milk and corn.
Spread into a greased 9-inch pan. Combine sour cream, salt and 1/2 Cheddar cheese and spread over batter.
Sprinkle with remaining cheese.
Bake at 425Β° for 30 minutes.
Cut into squares; serve warm.
