Cornmeal Muffins
Cornmeal Muffins is an easy dinner. Made with 2 c. cornmeal, 1 tsp. baking soda, 1 tsp. salt, 1 egg, beaten and 1 1/2 c. buttermilk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine first 3 ingredients in a medium bowl, mixing well. Combine egg and buttermilk, mixing well. Add to dry ingredients, stirring until batter is smooth.
Place a well-greased cast-iron muffin pan in a 500° oven for 2 minutes or until very hot. Remove pan from oven; spoon batter into pan, filling 3/4 full.
Bake at 500° for 9 to 10 minutes or until lightly browned.
Yields 16 muffins.
