Cornmeal Cookies
Cornmeal Cookies is an moderately easy dinner. Made with 3 c. butter, 3 c. sugar, 4 eggs, 6 c. flour and 2 c. cornmeal, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Mix butter and sugar in mixing bowl.
Add eggs and beat well. Mix flour, cornmeal, baking powder, salt and vanilla together. Add ingredients to mixture.
Put raisins in dough last.
Use No. 40 scoop and put dough on a greased 18 x 26-inch pan.
Bake at 350° for about 12 minutes in conventional oven or 325° for about 12 minutes in convection oven, until lightly browned.
Makes about 100 cookies.
