Preheat oven to 500Β° (to sear juices).

Meanwhile, lay hens in pan.

Salt and pepper each hen; rub in good.

After oven is hot, put hens in oven for 30 minutes or until crispy golden brown. Meanwhile on stovetop, saute onions and celery in butter.

Put can of cream of chicken and 1 can of water; heat until creamy and set aside until 30 minutes are up, then pour mixture over hens and cook for about another 20 minutes or until hens are done.

Serve over rice (can substitute chicken if you don't have Cornish hens).
