Corned Beef Soup
Corned Beef Soup is an moderately easy dinner. Made with 1 (10 oz.) pkg. fordhook lima beans, 2 (15 oz.) cans tomatoes, 3 medium potatoes, peeled and cut up into 1-inch sq., 1 large onion, peeled and cut up and 3 carrots, peeled and sliced or diced, this recipe delivers authentic, satisfying flavors. In a large pot boil fordhooks until almost done.
Add tomatoes and return to boil.
Add potatoes, onion and carrots and boil gently until vegetables are nearly done.
Add corned beef.
Add water along with salt and pepper to desired consistency and taste. Simmer over low heat, adding corn about 15 minutes before serving.
