Corn Tomato Chowder
Corn Tomato Chowder is an moderately easy dinner. Made with 2 oz. bacon, 1 small onion, chopped, 2 1/2 c. or 1 (no. 2) can whole grain corn, 1 1/2 c. diced tomatoes and 2 c. diced potatoes, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cut bacon in small pieces and fry slowly to a golden brown in a large saucepan. Add onion and cook slowly without browning for 5 minutes. Add corn, potatoes and tomatoes in alternate layers. Sprinkle with salt, sugar and pepper, then add water.
Cook slowly until potatoes are tender.
Remove from heat and stir milk in slowly. Serves 6 to 8.
