Corn Pie
Corn Pie is an moderately easy dinner. Made with 1 1/4 c. fine cracker crumbs, 1/2 c. butter, 2 tbsp. butter, 1 1/4 c. milk and 2 c. fresh raw corn, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Reserve 1/2 cup crumbs for top.
Mix rest with 1/2 cup melted butter and press in a 9-inch pie plate.
Combine 2 tablespoons butter, 1 cup milk, corn and salt.
Boil; reduce heat and cook 3 minutes.
Add flour to remaining 1/4 cup milk to form a smooth paste.
Add slowly to corn mixture.
Stir constantly.
Cook 2 to 3 minutes or until thick.
Cool slightly.
(Add onion salt, if desired.)
Add beaten eggs slowly, stirring constantly.
Pour into crust.
Sprinkle remaining crumbs over top.
Bake 20 minutes at 400Β°.
