Corn Casserole
Corn Casserole is an moderately easy dinner. Made with 2 large onions, chopped, 2 tbsp. margarine, 1 can creamed corn (no. 303), 1 can mexicorn and 1 c. milk, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Saute onions in margarine until tender and lightly brown.
Cool completely.
Beat eggs well.
Add milk, cans of corn, cornmeal, salt and pepper.
Mix well.
Add onions and cheese (reserve some cheese to sprinkle over the top of the casserole).
Pour mixture into 3-quart casserole.
Bake in a 350Β° oven for 50 to 60 minutes, until lightly browned.
