Corn Casserole
Corn Casserole is an moderately easy dinner. Made with 1 can whole kernel corn (juice and all), 1 can cream-style corn, 1 box corn meal muffin mix, 2 eggs, well beaten and 1 c. sour cream, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Saute margarine, onion and green pepper until soft.
Set aside. In a large bowl, mix well the corn, muffin mix and eggs.
Pour into a 9 x 13-inch pan.
Spread the sauteed mix over top of corn mix. Spoon sour cream in chunks on top of onion sauteed mix.
Just before baking, spread top with grated sharp cheese.
Bake at 400Β° for 30 minutes.
