Corn Casserole
Corn Casserole is an moderately easy dinner. Made with 1 can drained whole corn, 1 can creamed corn, 1 pkg. jiffy cornbread mix, 2 c. grated cheese and 1 onion, chopped (optional), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Fold corn into beaten eggs.
Add cornbread.
Mix into egg mixture, then add sour cream, cheese, salt and pepper.
If using onion and bell pepper, saute in oleo and add.
If not, then just add melted oleo.
Pour into a well-greased 9 x 12-inch baking dish. Bake at 375Β° for 40 minutes.
